how can I get the real picture quality on the home slideshow? Where can I tweak this?
It looks everytime blurry and even if I tried to enlarge the width on the template settings.

You can change the module settings and use the XL image.
There are some tweaks also.

You can increase the image quality in K2's settings (component params) and on the same time you can also increase the size (in width) of the XL image.

Thanks for your advice - I tried to tweak as much as I could but the picture resolution is function of the screen width. and when you have a big screen it stays blurry...

As an alternative, How can I set the entire website to limit with a fixed width (not exceeding 2048px for example) once "@media only screen and (min-width:1024px)" ?

Actually (I also double checked the demo) the image used is the XL size. We are not changing the image size width media queries. I don't think it is possible also with K2 Content to do it with css.

All we are doing is changing the background-attachment values which are not affecting the quality.

Keep in mind K2 will not regenerate images after you have changed its settings, you might have to use a 3rd party extension or reupload the image.

Finally the @media only screen and (min-width:1024px) will not affect your site's width by itself it will only apply some styles only if the viewport is larger than 1024px.

To increase the max-width of your site you can change the max-width value of .row . (custom.css please)

PS. Also make sure you are not viewing cached content (it has happened to me on multiple occasions).
