I downloaded K2 because somebody suggested it on the Joomla forum when I said I'm looking for a way to change the layout of my home page. i find the documentation quite confusing for this component, and there are so many options/ tabs for it in the back end of joomla. Does anyone have any good resources for me for this particular task? Or perhaps any other documentation I might find more helpful than what is on this website.. I know the best documentation should be on this website but from the explanation I read on here, I'm not even quite sure what K2 is supposed to be used for? I apologize for these rookie questions. Thanks.

Take a look at the k2 demo site and you will see examples of what can be done.
Also, take a look at the major template vendors that support k2 at their examples that come with their templates

Also, take a look at gavick, they offer a number of free modules that are compatible with K2 (actually they work very well) see here for a demo of a few of them in different configurations:
