I'm not that new to K2 but figured this might be a good place to ask this question... I'm looking for a method or a plugin that would allow me to see which registered individuals read a particular item. Basically this is for a site where weekly meeting minutes are posted in K2 and management would like to be able to see a list of who actually reads them, not just how many people have read them. Any suggestions?

A shot in the dark but I know mighty extensions has a reporting module for K2... I have not tried it but it seems powerful enough to do what you are asking :)
