The first thing I did was try to create a category and I received an error 500 message.

Does anyone have a link to the system requirements?

Or if someone knows the fix, I would greatly appreciate it.

If J2.5 is running, the basic requirments should be ok
Go to K2 dashboard, check the information tab and see that the necessary things are loaded (mb_string is often the problem)
Also, go to the k2 Paramaters and check the jquery backend handeling, try load the remote copy
Be sure your category, item, and menu are published and set to public
