I'm trying to add some code to a K2 item so I can display a chess viewer.

You would probably want it in item.php.
Check the documentation at the top, there is an explination of templating for k2

I know this is somewhat of an old post, but since then I've found an answer that might be helpful to others. I found a module called "flexi custom code". I used this module to put in my code, then used the loadposition code in my item to place the viewer. Worked like a champ. If anyone is interested in this module you can find it at Joomla's extensions.
