Regular overrides go in
templates\jsn_epic_pro\html\com_k2\templates\yourtemplate name
Can other items be overwridden in the same manner - such as
override - components\com_k2\models\items.php by placing a copy of it in another directory.
I have tried several combinations but none successfully.

i think you can "override" the model. Take a look at the plugin i attachet.

The Plugin "overrides" the item model from com_content. it is a copy with changes of the orignal model.

You can do the same with k2 model.
