Take a look on K2Joom at the two template item examples. Neither one are exactly what you want. The sub templates are placing all the information you turn on for an item into the content area of your "current" template and sort of simulating "regular template" positions. The entire width of the display of the content area will depend on wether or not you have something enabled in the left or right position when the item view displays.
Im sure the extra fields can be moved, Best way to do it is copy the subtemplate you are using and find the block of code that displays extra fields and move it just before or after the block of code that displays the date.

If you can find a K2 template to match your RT one then you can set the K2 template to that menu item and when you leave that menu item it then reverts to the RT template, you could use a different template for each menu item if you so wished. Joomlabamboo has some nice K2 templates.
