Using Joomla 1.15.20, and k2 v2.3....
When using extra fields, with "text field" designated, the quote marks are dropped after saving the item...e.g. if I enter this phrase

item is 15" length by 22" width

The phrase then will display on the web site as 
item is 15 length by 22 width

Then when returning to the item for editing, there are no quote marks in the extra field entry...

The entire catalog of product listings have lost all the quote mark entries...

Is this a bug, or am I missing something here...

It may be "cleaning up" your code
Look for settings for clean up or stripping content

I have verified that the "content cleanup setting" for K2 in the "parameters" is set to "no" for both fulltext and introtext cleanup...
Possibly something else that I cannot quite pinpoint...also I checked in the JCE config and cannot find anything there...
The examples that I was referring to in the site linked to were simply using quotes as indicator for 'inches'...I have since done some tests and found that if I use the quotes around words or phrases, the whole phrase (qoutes included) with disappear (in the editing interface) after saving the item...but this phrase will display correctly on the website, along with the quote marks...
