How can I remove the bar that stays when I hide Font Resize, Print and Email and can I add another image there instead?  How?  Also which is the item view option for to remove "More in this category:"?

Try moving < div class = " itemtoolbar " > and < ul > (spaces added) below the if statment in item.php your using at line 90 or so
This may work - you may have to move the ending tags as well...
or create an override for this category and delete the tags completely
