I know it can be done because it's on the website I maintain for work but I can't work out how they do it. 

There's a category called products then all the products are added as items in K2.  If you add an image under the image tab in items it doesn't appear on the item page, it appears on the category product page in the body as a link.

I've been hunting around how to do this for a couple of days and can't find anything on it

Can anyone help me please? (my technical knowledge is minimal)

If you go adopt a dog (this is an article) I want the image items from K2 to appear on this page

"Adopt a dog" is category, not Item. Seems so.

 

You have in (sub?) category (blue) block just removed option for clickable Title of subcategory.

 

If your Joomla menu link for adopt a dog is some parent category with several subcategories, chose all subcategories in link also. Or in parent category settings set that it pulls all Items from subcategories too. (mouse over different options and you get explanation)

This page is an article.  These icon images in the middle come automatically when an image is inserted into the item.  They don't appear on the item page, only in the article page.
