My home page is set to the latest items from a specific category (K2 » Latest items from (one or more) users or categories).

With this layout the author is not shown. How can I get that to appear?

Try creating an override for the category in question, and edit the latest_item.php
Get the code for author display from item.php and insert it into the latest_item.php
