In the Print PDF feature, is it possible when viewing a category page (with item intros) to print a PDF of all those items within that category but onto one PDF and with their full text?

Hi. K2 doesn't have a print PDF feature. Please be more specific.

The icons on the topright hand side of each Item ,there is a Email icon, Print icon, PDF icon this is the Print PDF icon I mean.

There is no PDF icon in K2... Are you sure that you are viewing a K2 item and not a Joomla! article? Or you may have used some extension for this. K2 out of the box does not provice a PDF icon.
