I'm having problems updating K2 from 2.5 to 2.6.1 I receive the following error message:
An error has occurred. Copy failed.
I have Joomla 2.7.5. Any idea what is wrong, all the file permissions are writable.

Hi. Usually the copy failed is generated due to directory permissions. One thing you can do is to try to update to 2.5.7 first and then to 2.6.1.
