I use joomla 2.5 and just installed K2. When I try to add an item or create a category, it will not let me save or apply the changes.

I think that you are using K2 on localhost and you PC it is not connected to the internet.
If so, you should configure K2 to load the local jquery. This can be done under k2 config menu.
