is there a way to hide certain text parts ("Please register, to acces the downloads") für registered users?
I know that there are certain plugins, but they don't work in the k2 Category Description...

You may be able to change language strings
also,
you may be able to firebug and if they are surrounded by a unique tag - display:none in your css

Which CSS file do I have to edit, to change the logged in, or the "GUEST" mode settings.

You would need to change the php files to test for logged in or not in a k2 override
