sharing my k2 items (2.6.6 on a J! 2.5.11 site) on Facebook, the titles with apostrophes appear like this:
L'insostenibile, with ' instead '
charset is:
<meta http-equiv="content-type" content="text/html; charset=utf-8" />

How can I fix this issue?

Did you follow @Krikors advise and check if your links are being cached from facebook.
Check you links through the developers.facebook.com/tools/debug
