I am finding that in the image parameters I am forced to add an image size in pixels. I am working on a responsive design and I need the image in a percentage or just no width specified. Is it possible to do this?

You still need to set the maximum width in pixels in responsive design too.
You have to go to category_item.php and item.php and remove the inline attributes of the img tag, or you can experiment with the min-width and max-width properties.
