How do I alter settings so that I only see a third of the item, then click read more to read the rest?

It's a k2 item menu type.

You need to manually specify an introtext (or an introtext limit) in order for the read more function to work properly.

If you have a menu towards multiple categories the limit won't though.

I strong;y suggest you either manually specify the introtext using your editor's read more button or use two editors one for introtext and one for fulltext. (This setting is located under the advanced settings tab of K2' params.)
