I need to change the whole view of categories and item view.
I want to hide the category title and the picture and the number of items in brackets next to the categories title, also I want to hide the author details that appear under the article and also the latest articles of the user...

I know that I can change it in every category's Item view options, but I don't wanna do that for every category I have, how can I do that just once and for everything?

You can simply use a category as a base, and have all the other categories inherit its values.
