How do I change the item order in a menu item (latest items from) from "created" to "order"?

You can't that is why its called latest items from. If you want to change the item ordering I suggest you use the K2 Categories menu item.

I know I know ;-)

However, this menu item has a way of showing the categories' name above the items which the k2 Categories Menu item does not have.

I have four categories with X items in each. I need to show all items on the same page with the items' category name above:

Category name A
- Item 1
- Item 2
- Item 3

Catogory name B
- Item 1
- Item 2
- item 3
- Item 4
- Item 5

Category name C
- Item 1
- Item 2
- item 3
- Item 4
- Item 5
- Item 6
- Item 7

Category name D
- Item 1

Any suggestions?

For complete control I would probably use the K2 content module. You can easily create a template that fits your needs.
