I'm super new to K2 and read that I can use K2 as a catalog. my question is if I can make it so that my users enter the input? and if yes, would greatly appreciate a quick explanation how to go about this...

You just need to create a K2 user group which will give access to your users to add/edit items through specific or all categories of your site.
Then you will have to assign the users you want to this K2 user group.
