Is there a way to set the parameter for having a separate editor window for introtext/fulltext to be different depending on the K2 category?

For example, items in Category A would have separate editor windows for introtext/fulltext, but Category B would have only one editor window.

No, I'm afraid that there is no such option per category. You can only choose the editor type through the global K2 parameters.
