I've got a simple set up for text formatting, just the basics (Bold, Cursive etc). How do I enable the advanced or standard set up which allows me to insert HTML code etc. ??

We use

TinyMCE as standard, but we also got CodeMirror.

TinyMCE has its options to load the advanced editor and more in the plugin. Through Extensions -> Plugin Manager locate TinyMCE and choose the options you want for your editor through there.
The same applies for Code Mirror but it has very few options to select.
