what I'm trying to achieve is to create a menu item almost exact like "Latest items from (one or more) users or categories " but instead of items I want to list sub-categories.

I don't think it is possible to do so, but maybe I just cannot see it well.
I want to display titles of chosen categories and then under those titles to list all (or chosen) subcategories from those particular categories....

any ideas?

Hello Bartek you can do this by editing the category's settings and displaying the subcategories blocks.

You can also experiment with Catalog mode as well.
