Here's what I'm trying to do:

For example, I'd like for a user to be able to log into the back end and go to K2. Once there, they would only be able to add, edit, delete and publish items from one specific K2 category.

Any guidance on how to do this would be appreciated!

Hello Robert,

You have to configurate the permissions of K2 accordingly as well.
The permissions are located in the component's parameters.
