I'm using Joomla 2.5.19 with K2 2.6.8.
I created a new item from the backend, but when I try to access it, I get a 403 forbidden error.

I looked this up, and most people had an issue when doing this from the front end. Any ideas on why creating an item from the admin end would give a 403?

The weird thing is, I made two items the same way already, and they're fine. I even tried making a K2 user group and adding Super User to it, with all permissions turned on. Didn't work.

Also tried deleting and re-creating the item. Still no luck.

Hi. I don't get what's happening exactly. You said that you created two items and they work and then you say that you deleted the specific item and you created it again but the issue remains. So to clarify, does this occur for all your items? Try to check for any third-party K2 plugins that might cause this.
