I really need help and I could not find the solution in the forum. How can I find the global parameters for all categories and items. Because it is not comfortable to change category and items parameters on every one.

I get

FinderIndexerAdapter::getItemMenuTitle
FinderIndexerAdapter::change
FinderIndexerAdapter::remove
FinderIndexerAdapter::getItemDoes

every time I save a category or item. Do this have any relation to that? Or what does this mean?

There are no global settings. Items can inherit their category settings. Categories can also inherit settings from other categories. Finally regarding the messages you get these are from the Smart Search plugin for K2. If you do not need Smart Search you can disable it.
