On the internet there are different mediums for displaying content, Pages and Posts, Wordpress makes this simple by allowing you to create either a Page or a Post but I do not see how to do this in Joomla with K2.

A Page is for more 'evergreen' content that will be useful and valuable to people regardless of when it was created or when it is viewed.

A Post is for more timely news-type content that is timestamped and generally becomes less valuable/relevant over time.

I do not see any obvious way to create a Page as all Items are timestamped and fall into the Post category.

Can someone explain how I can create a Page with K2?

In Joomla! everything is an article. Same in K2. Everything is an item. You can differentiate the look and feel of these 'pages' by altering their category details or create a template for these items only.
