Hy. Maybe I'm missing some options but I can't seem to find any way to change the plugin order in item detail view. As in by default it's: item image, text, media, gallery... I want it to be item image, text, gallery, then everything else. Is there a way to change this ordering?

You need to override the item.php file and reorder these blocks.
The code is commented so you won't have an issue identifying the elements.
