How can I use K2 to generate a page (list) of featured category items that can be hyperlinked. I created a new category and when I assigned a Menu Item Type to it under K2, I made it "Categories." Somehow it is not drawing in the items unless I do not have it configured it correctly.

You need to select the category and you need to enable the "Show only featured items" setting.
