is there a way to change the value of an extra field globaly? I already edited the value in the back end, but it doesn't affect the values of already published articles.

You would need to change it in the database, in the xx__k2_items table

As Krikor said, you can change it in the database, the column 'extra_fields' of the xx__k2_items table.

You need to be aware of json format, and it depends on the field type you want to change.
