Id like to know how to create a, for example, 3x3 grid layout that can include all items in a category that may be e.g 12 items and possibly with pagination. Iv tried creating but it lays out 3 or 4 columns then the rest are child items and such.

The options you are looking for are located in the category's settings.
Simply load only the primary or the leading items and select 0 for the other groups (NOT the columns).
