done it => all categorie are update but nothing change ...
all old item aren't display field and new item are ok

Look at the params column, does it have quotes around catItemExtraFields and 0?
If no, modify the sql statement according to what you see in the column and run it again.

in my db all my category have this

"catItemExtraFields":"1"

but i am sure about category heritage .... why only one item display field and other not....

Try the following.
Disable all K2 related extensions.
Go through each of the category's settings and double check if the extrafields have been enabled.

if downgrade too 2.7.0 field are displayed

sorry but i didn't think it's a solution to downgrade ... security issue etc ..
its realy an important problem ...
on 2.7.1 only new item display field
on 2.7.0 all item are good
=> no change in template
