I wanted to ask if it was possible to link to a SEF URL for a K2 item directly, IF it is NOT part of a menu.

I am building a whole bunch of landing pages, and do not want to link to the item ID.

If the category is mapped to a menu item, you can use the /menu-item/id-alias pattern.

Thanks for the reply! Unfortunately the category is not mapped to a menu item, its simply a category in the backend used for organization.

IF I mapped it to a menu that wasn't being used anywhere (A phantom menu, I guess) would that work?

Yes that would work, but the optimal solution would be to directly map that item into a menu item.

THe problem with mapping it to a menu item is I plan to have dozens of landing pages, and they will get traffic from adwords so I don't want them reachable by any other way.

If linking the category to a hidden menu works, then we should be all good. :)
