I know that is not implemented but I woudl like to ask if there is any plugin in order to save in K2 Item Rating who user makes the rating. Franky speaking this could be a column in k2_rating which saves the user.

If there is not such module or plugin, maybe any idea or help how to write this down in order not to conflict with K2?

This indeed can be a column in that table.
I would recommend developing a K2 plugin based on the rating (extend the code) and if the user is logged in save the user's username in the database.
