This would require modifications to the search plugin, as it requires that the SQL query issued upon searching is changed. If you're comfortable with that, you can just copy the K2 Search plugin, use a different name and then modify its SQL queries to only look in certain fields in the database (title and category as you mention).

There is no configurable way to do this in the plugin however. I may consider this as a future feature to be added though.
