The risk is not PHP per se but Joomla 2.5.

If you already have a site in 2.5, it's really not a big deal to upgrade it to 3.x: docs.joomla.org/Joomla_2.5_to_3.x_Step_by_Step_Migration

And K2 is the least to worry about.

Then you can use K2 with Joomla 2.5, as long as you understand the risks with Joomla itself being outdated.

The risk is all yours. In the end, is some template worth it to keep you in Joomla 2.5 (which is probably outdated as a design as well)?

There are many reasons to stay on Joomla 2.5.28: 1. Consistency of the user interface is a big plus of any software. 2. Updating Joomla is much more difficult than WordPress.... Even if it is naked with a standard template, it cannot be updated without an error that causes the site to fail. 3. Clients 35-60 years old usually do not like adaptive design, and these are the best clients that I focus on. 4. The website has modules and plugins which support in Joomla 3 not.
