K2 seems to generate unwanted pages with a URL that ends in itemlist/user/nn-usersname (nn is the user id and usersname is the users first and last names) with a link to all K2 items by the specified user. I use k2 for a lot of websites where there is only one user (me).

Somehow Google finds these pages and I have no idea how, - They are not in the Site Map and I have all the Author Options turned off in each of the K2 Categories, there are no menu links to any user pages.

Any suggestions greatly appreciated

Do you have a menu item for the main k2 cat ?
