Hi,

I have searched the forum and have not found a solution, although I do see many people have this problem.  Sorry if I have missed something. 

My viewport area is set to 425 x 300 and I have enabled smart resizing, but all of my images are not being resized properly, they need to be resized to fit those dimensions and not cropped on the left and right.

Here is a link to one gallery.  I have 6 galleries on different pages, each using the default settings that are behaving the same way.

What do I need to change and where?

This is logical to happen since the thumbnails dimension is almost like square and your image is like parallelogram! You may set different dimensions in your thumbnails if you want in order to be closer to original dimensions of the images...
