How, using the PRO release of this awesome gallery, could I get it to show a single thumbnail in a content item (easy), but RANDOMLY chosen?

Any ideas on the back of a postcard to the usual address  ;)

Also curious about this.
If we could add, say, 3 random images in the intro text, the gallery would load faster.

Just use "random order" in the Order parameter inside the plugin parameters. ;)

Regarding your second question, I'd like you to be more specific please.

What I meant was: If we could add three random pictures from the gallery into the intro page (and the rest in the main text) so that the page with all the intro pages would load faster.
