Is it possible to add a default caption for all the images in the gallery (every image would have the same caption)?

This feature you are asking is already being supported in SIG. Go to the plugin parameters and enable them.

Where can I ALTER the default captions? (In a php file? So I can have the same custom caption for ALL of my items?)

To any noobs who are frustrated:

in default.php ... nested in the jw_sigpro/tmpl/Classic(or whatever template to got going on)

there are two echo things on  line 26, if you remove the echo that is actually in the span tags..
you can hard code it in like this:

<span class="sigProCaption" title="<?php echo $photo->captionTitle; ?>">YOU CAN CLICK THIS.. if you want</span>
