Hi, I have a client who doesn't want to pay for simple image gallery pro no more. How can I downgrade it without loosing every category and image?

Even if you uninstall it, you won't lose anything. So uninstall the Pro and install the Free version and that's it.

If you're using K2 and the Image Gallery tab, then you won't lose your data, but these galleries won't work.
